Parker just try this once.
Get a couple off goose breast and put em in a ziplock over night with some olive oil and garlic. Next day BBQ em like a good steak as rare as you can handle it. saute up some onion and bell pepers while they are on the barbi.
When you pull the goose off slice it into thin strips and add it to the onion and pepers and through it all on a plate as soon as it's mixed together. I felt the way you fill until I had it that way and now I love it. Most of my life I was fed over cooked game mainly vinson and never liked it. now that I know how to cook it I prefer it to beef.
