Over cooked game is the WORST!!! it might not have to be alive, but it should sure be bloody!
I love BBQed goose breat. It is some of the best stuff there is, and really ends up like a good steak. It must be rare though. We usually use red wine, and oil with a little garlic on the goose.
Roast ducks are some of my faves as well. Nothing like a big fat mallard thats been eating corn for a week. Those big late season drakes make some fantastic dinners.
I also like duck breasts rolled around a spear of jalepeno and wrapped in bacon on the grill. Great stuff.
Making me hungry just thinkin about it!
