I'm with Steve on this. If you want a lot of heat, propane is great and I use it for a lot of things, but not smoking. Also it sounds (and I'm only guessing) that you may have a ventilation problem if you are misting the meat. I would suggest that you try reducing the ventilation and using large wood chunks instead of chips to reduce the need to babysit the thing.
