Lingcod, Ahi pretty raw, rock fish, halibut, everything else.
I only rated halibut lower, because I never get fresh halibut, and every restaurant I go to always overcook it. I get lots of black rocks in the spring, and on the grill, with lots of re-basting, it is legendary.

That is the problem with most fish in resturants, it gets overcooked. Especially halibut though. Halibut is definately better when it looks under-cooked. When ya get big 'butts, fillet them, then steak the fillets 1 to 1.5 inches thick, easy to cook properly then. By the way, I got a Big Green Egg for a gift this year, it's a type of charcoal grill. Simply the best way to cook any meat, of any kind, that I have found.

fresh water perch fresh or frozen correctly, cold water walleye (Canada) Fresh tuna, Fresh Salmon, halibut ,ling. Rock fish may be the most important fish to eat fresh. I love it the first day or two but after that it's not the same fish. try sauteing in butter and garlic the night you catch it.

Batter-dipped and deep fried salmon is probably on the top of my list.

Anthony's prepared Copper river Chinook or Sockeye (when in season) is about tops for the Mrs. & myself. Made the mistake of ordering the Chinook & Halibut combo a few years back, even after the waitress urged us NOT to order the Halibut....Won't do that again...
