Like...it's so good that I've seriously contemplated making a business out of it and providing it commercially. There is literally nothing on the consumer market like it.

Damn - now I want a plate of real Mexican food. My only complaint about PNW cuisine is the lack of really good Mexican and BBQ. To their credit, the places up here try, but it's just not the same.
