My thoughts exactly. Depth reading cuts out just beyond 16-17 knots.

Looking straight down at the water from the transom at cruising speed, water is simultaneously skimming past the hull and the cavitation plate at the exact same level. The bottom of the transducer is probably ever so slightly above that level at full plane, picking up some turbulence from the hull.

Down a few millimeters will probably take care of it perfectly.
